A festive, flavourful and moist fruit cake to enjoy whole Christmas holiday season. The traditional classic Christmas fruit cakes are dry, overly sweet and bland in flavour. Mostly made with soaked unsweetened dried fruit.

This Christmas fruit cake is not any average fruit cake recipe. It has been a holiday staple in our household since 2010. Made with real ingredients without added sugar, this fruit cake is moist and perfectly balanced in taste.

HOW TO MAKE THIS FRUIT CAKE

Ingredients

  • 500g mixed dried fruits (Raisins, apricots, prunes, cranberries, sultanas, etc.)
  • 200g mixed dried nuts (groundnuts, almonds, walnuts, cashew nuts, etc.)
  • 200ml fresh milk
  • 200g all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 3 large eggs (lightly beaten)
  • 3 tablespoons brandy or rum (for those who wish to preserve the cake long)

Steps to make it

01 Preheat oven 160°C

02 Line your baking pan (I choose a 8″ round pan and a rectangular pan)

03 Sieve the flour, baking powder and baking soda together

04 Mix dried fruits and dried nuts evenly

05 Add the fruit mix, the beaten eggs and fresh milk to the flour mixture alternatively and fold together until combined

06 Put the mixture in your baking pan

07 Bake 45 minutes in 1 Large pan; 25-35 minutes in 2 Smaller pans

08 Insert a skewer or fine knife into the center of the cake; it should be clean when you pull it out.

09 Cool the cake on a wire rack for an hour, then remove it from the pan to cool completely. Then, prick the surface of the cake with a skewer and slowly pour over 3 tablespoons brandy (you may skip this step if you don’t like the presence of alcohol).
