It’s twelve days to Christmas! I tweak the original recipe to bake melt-in-the-mouth soft golden raisin cookies. My mum loves it so much. She ate ten during our tea break. The cookies melt in your mouth. The perfect recipe for Christmas.
This is a less sweet recipe. I use brown sugar, instead of castor sugar.
Bite-sized Golden Raisin Cookies
These cookies melt in your mouth. Soft but not chewy.

Ingredients
- 90g unsalted butter
- 23g brown sugar
- 35g eggs
- 65g cake flour
- 50g rice flour
- 17g milk powder
- 30g dried golden raisins
Easy to follow instructions
01 Melt butter at room temperature. Then add in the sugar. Whisk well.
02 Add the egg slowly on three occasions. Beat it at a quick pace until fully combined.
03 Sift the flours and the milk powder into the mixture. Fold together.
04 Preheat the oven at 180C.
05 Take 1-2 raisins and a spoon of the mixture. Fold them into bite-size.
06 Lined the baking tray with baking paper. Keep about 2cm distance between each cookie.
07 Bake for 10 minutes at 180C, then followed by another 15 minutes at 165C. Your cookies will turn into a lovely shade of golden brown. Let them cool aside. The batter can make about 60 pieces.
