Simple Almond & Cranberries Cookies Recipe

Lunar New Year is just two weeks away. Normally families will prepare traditional Chinese cookies like peanut cookies at home. I feel like we should try something different this year. Almond & Cranberries cookies are a mix of Chinese and Western recipes. This recipe is egg-less and has lower sugar.

Almond & Cranberries Cookies

Ingredients

  • 150g cake flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 80g unsalted butter
  • 60g brown sugar
  • 120g yogurt
  • 70g dried cranberries, chopped
  • 40g ground almond

Simple instructions

01 Melt butter at room temperature. Then add in the sugar. Whisk well.

02 Add in yogurt. Mix it well.

03 Sift in the flour in a bowl. Add in baking soda and baking powder. Use the whisk to mix them properly

04 Fold gently with a whisk. Use a spatula to scrape the side and bottom of the mixture.

05 Add in dried cranberries and ground almonds. Mix them well with a spatula.

06 Refrigerate for 12 minutes. Pre-heat the oven to 180C.

07 Scoop out with an ice-cream scoop. Place it on the baking tray. Flatten it with a spoon.

08 Bake it for 12-15 minutes. The yield is 66 pieces.
