Another week to Lunar New Year, I am busy baking new year cookies for the family and friends. Instead of my usual peanut cookies, I try to make our favourite White Almond cookies. If you wonder why I prefer to bake my cookies, watch this video to find out.
This recipe can make about ninety pieces. There is no baking soda and butter free.
Healthy White Almond Cookies
Try making your White Almond Cookies at home

Ingredients
- 280g cake flour
- 45g icing sugar (the original measurement is 80g)
- 100g ground almond
- 130g roasted almond nibs
- 150g corn oil (I use coconut oil)
Simple instructions
01 Sieve the flour in a mixing bowl. Add in the sugar and mix well.
02 Mix in the ground almond powder. Stir with a whisk to mix well.
03 Roast raw almond at 150C for ten minutes. Let them cool on the rack before crunching them into nib pieces.
04 Add in corn oil at two instances. Use a spatula to combine them well.
05 Use your hand to knead into a dough.
06 Place the dough on a rectangular plate. Spread them evenly at the same height. Use a cookie cutter to cut out your favourite shape. Then place them on a baking tray.
07 Bake the cookies at 150C for 15 minutes. Let them cool on a rack before storing. They just melt in your mouth.
