Traditional Walnut Cookies in the making

This is my first trial. The traditional Walnut Cookies recipe is not new, but I have never made it before. I tried two recipes this year. You can read the melt-in-your-mouth White Almond Cookies recipe here.

Traditional Walnut Cookies are one of our family’s favourite lunar new year cookies. I reduced the sugar and vegetable oil to keep the cookies as healthy as possible. This recipe can make around 50 pieces.

Traditional Walnut Cookies

The texture is soft and chewy.

Chinese new year Walnut cookies

Ingredients

  • 150g cake flour
  • 1 1/4 tsp baking powder
  • 40g walnuts
  • 40g butter
  • 30g vegetable oil (08Jan ’23 I reduce the vegetable oil to 10g; it is not too oily)
  • 50g brown sugar (The original recipe is 100g castor sugar)
  • 30g egg

Simple guides

01 Sieve flour & baking powder in a big bowl. Use a whisk to mix them well.

02 Cut the walnuts into small pieces. Then, dry fry walnut chunks to golden coloured.

03 Cool the walnuts. Put them in a grinder with some flour.

04 Mix the ground walnuts with the remaining flour mixture.

05 Add butter, vegetable oil, sugar and egg to the dry mixture. Use a spatula to mix evenly. Knead by hand if you need to.

06 Let the dough rests for 15 minutes. Start making the cookies. Prepare cashew nuts in half and place one on each cookie. Brush the cookie surface with egg wash.

07 Bake 20 minutes at 160C.
