Ingredients ——————————

  • 170g bitter gourd
  • 2 Tbsp vegetable oil
  • 2 Grade A eggs
  • ¼ tsp soy sauce

Instructions ——————————

  1. Cut bitter melon in half length-wise. Scoop out the seeds with a spoon. Cut the gourd halves at a diagonal into thin slices.
  2. Heat vegetable oil in a wok. Add prepared bitter melon in. Stir fry for 3 minutes until lightly brown.
  3. Put the soy sauce into the beaten egg. Pour in the beaten egg.
  4. Once eggs start to set, stir to break it up. Continue stirring and flipping until eggs are fully cooked. Takes about 3 minutes.
  5. Transfer your fried eggs with bitter gourd to a plate. A healthy meal for the family.
