How are homemade chocolate digestive biscuits made

I modified my digestive biscuits recipe to make a chocolate flavour.

Bittersweet chocolate digestive biscuits

This is my fourth trial to get the right texture and sweetness

Ingredients

  • 25g pure cocoa powder
  • 2g instant coffee powder
  • 130g cake flour
  • 75g rolled oats
  • 70g unsalted butter
  • 40g brown sugar
  • 1 Tbsp milk powder
  • 1 tsp baking powder

Directions

01 Preheat the oven to 180°C.

02 Melt the butter and sugar together at room temperature. Melt the chocolate powder and coffee powder together in boiling water. Gradually pour in the water. Stir until the mixture is completely smooth.

03 In a large mixing bowl, evenly combine the butter and sugar. After that, stir the melted chocolate into the butter mixture.

04 Grind the rolled oats with some flour in a grinder. Sift together the flour, rolled oats flour, and baking powder.

05 Finally, add the milk powder. Evenly combine them. To combine, use your hand. Refrigerate the batter for at least 30 minutes.

06 Make your biscuits with a biscuit mould. Arrange the biscuits on a baking sheet.

07 Bake for 20 minutes. With a 5cm mould, I can produce 30 pieces.
